Curried Chicken Salad Wraps
1 leaner – 3 greens – 1 healthy fat – 3 condiments (per serving)
2 servings Ingredients: • ¼ tsp ground black pepper • ½ cup diced celery • 1, (10-oz.) can of chicken breast, packed in water • 2 tsp curry powder • 2 tbsp fresh parsley, chopped • 8 large green leaf or romaine lettuce leaves • ½ cup low fat Greek yogurt • 2/3 oz. chopped peanuts • ¼ tsp salt
Directions:
1. Mix the chicken, yogurt, celery, herbs and spices together in a medium bowl.
2. Prepare wraps by topping lettuce leaves with chicken salad, sprinkling with peanuts, and rolling wraps.
