Enoki Mushroom Beef Parcels
1 lean – 3 greens – 0 healthy fats – 3 condiments (per serving)
4 servings Ingredients: • 1 lb. lean beef tenderloin, thinly sliced • ½ tbsp canola oil • 1 lb. enoki mushrooms, remove the roots • 4 cups shredded lettuce • ¼ cup Japanese-style sesame sauce • ½ medium spring onion, trimmed and chopped
1. Place a small bunch of enoki mushrooms onto a slice of beef and roll it up.
2. Heat oil in pan. Pan-fry the beef parcels on medium heat for 1½ minutes on each side until cooked.
3. Turn off the heat and garnish with spring onion. Serve hot with sesame sauce and lettuce.
